Today’s post is about how to make my all-time favorite “Chicken Fold-Ups!”

Total time to make: 30 minutes

Serves: 2-4

Ingredients:

2 cups of cooked cubed chicken.

3 oz. of cream cheese.

2 Tbs. butter or margarine.

1/2 TSP. salt.

1/8 TSP. pepper.

Topping:

1 Tbs. butter.

3/4 cups crushed croutons.

1 (8oz.) can crescent rolls (I use pillsbury butter flake rolls!)

Here are the steps:

Preheat the oven to 350 degrees.

Cook and cube the chicken. I personally cook, shred, and freeze my chicken by the cup, so during this step all I do is defrost my chicken.

 Mix the cream cheese and the butter or margarine. I typically have to soften the cream cheese to make the mixing easier.

 Add the salt and pepper to the cream cheese and butter mix.

 Mix in the chicken gradually to the cheese mixture.

 Spoon the filling into crescent rolls.

Note: The crescent rolls come in a set of 4 with pre-cut diagonal squares to make 8 smaller rolls. For this recipe use the set of 4 crescent rolls as you will need to fold up the 4 corners onto the top of the chicken mixture.

 At this point you should have 4 square crescent rolls with a dollop of chicken/cheese mixture in the middle of them. Now you will take each of the four corners and bring them to the top middle of the roll.

 For the topping you will melt the butter and mix it with the crushed croutons and pour this over the crescent rolls. This step is optional, and will result in a crunchier “fold-up”.

 Bake at 350 degrees for 20-25 minutes.
